I love toys with rag-doll style joints and a few years ago I unvented a technique to create what I call a knitted seam. I use this technique in my Loopy Lion and Purla Doll patterns. The photographs in this tutorial are taken from the point of view of a right handed knitter and use the Donkey toy as a sample (currently a work in progress).
1. Make sure that the leg is fully stuffed as this process will close the top of the leg. It is advisable to knit the last round in a larger diameter needle. Make sure that the stitches for the leg are arranged correctly.

2. Hold a smaller diameter pair of double point needles in your right hand (I recommend using the thinnest needles you have, even better if you have a pair of circulars) and the leg needles in your left.

3. Slip the first stitch on the front needle in your left hand onto the back needle in your right hand

4. Slip the first stitch on the back needle in your left hand onto the front needle in your right hand.

5. Continue until all of the all of the stitches have been crossed.

6. When the next round is worked it will form a seam joint as shown below.
Working this round can be difficult, to make it easier I slip the stitches on the back needle to a circular needle and move them to the cable.
